The Culinary Arts & Hospitality Studies Department of the City College of San Francisco has 280 competencies prescribed by the American Culinary Federation that students must master upon graduation. This symposium details our process of creating a department-wide culture of assessment for students, faculty, and administrators in real-time laboratory environments.
